Dairy Free Chocolate Pudding
Do you ever have too many ripe avocados and you already have enough guacamole and wonder what in the heck am I going to do with all of these! Ripe avocados are not only adding more nutrients, they are a great way to enhance the pudding with a rich and creamy texture. They are great to use in brownies, cakes, dressings, sauces and smoothies.
This dairy free chocolate pudding is so rich and creamy when you taste it you would swear it's not good for you. Since there are only clean ingredients meaning that they have no processed chemicals, it is a delicious and nutritious treat that you can enjoy as a quick snack or desert. The avocado will make the pudding creamy and the cocoa and maple syrup will overpower the taste of the avocado and if you didn't know it was in there you would never guess:-) Ideally this pudding is best eaten right after making or you can refrigerate it for 20-25 minutes to serve chilled. It can last in the refrigerator up to 2 days but if left longer the avocado could begin to overpower the chocolate flavor.
Make sure your avocado is not brown yet. The flavor will be off and you won't get the same results.
This is a fun pudding to make with your kids, family and friends and you can create different puddings by adding a banana, mint or whatever you would like to add and create your own.
Toppings are the best part! Set out toppings of choice from the suggestions below or experiment with your own variations and have fun creating your own chocolate pudding masterpieces!
*Note: Make sure that all the ingredients are well blended and that there aren't any avocado bits left unprocessed.
Dairy Free Chocolate Pudding
Prep Time: 5 minutes/25+ minutes if chilled
Servings: 2
Ingredients
1 large avocado or 2 small
3 Tbsps Cocoa powder
1-2 Tbsps Maple Syrup (1 Tbsp if adding banana)
1-2 Tbsps nut milk for thinning if needed
Optional
1 ripe banana
Toppings
Sliced strawberries
Blueberries
Sliced bananas
Dehydrated coconut flakes
Hemp seeds
Almonds sliced
Walnuts chopped
Chocolate nibs
Trail mix
Granola
Directions
Using a blender or food processor process the avocado first making sure that it is completely pureed without any chunks. Not so great in the pudding! Add the rest of the ingredients and blend until smooth and creamy. You can add some nut milk or water as needed to help thin the mixture if too thick. Pudding is ready to serve at room temperature or it can be chilled for 20-30 minutes beforehand to serve cold.
Top with your favorite toppings and enjoy!
Pudding will last covered in an airtight container in the refrigerator for up to 2 days.
