Thai Buddha Bowl
Buddha bowls are very easy and so fun to make. A delicious and nutritious meal with bites of whatever you choose to put in them. This is when the fun begins!
The basics usually include a small portion of grain or starch like rice, quinoa, millet, sweet potatoes or corn. This is followed by a portion of protein like tofu, tempeh, chickpeas and beans (Buddha bowls are usually vegetarian in nature but they have evolved into including meat or fish). Mixed greens can be added as well and they can serve as a base to arrange the other portions. Add an assortment of colorful vegetables/fruits nuts and seeds which can be both raw or cooked. Let your creativity kick in and create your own masterpiece!
Arrange the ingredients into a pretty bowl and drizzle your favorite salad dressing over the top or you can simply add a tablespoon of EVOO, a splash of apple cider vinegar or fresh lemon juice and a dash of your favorite herbs/seasonings.
Buddha bowls are a great way to balance your portions and to get more nutrients by adding a variety of colorful vegetables. This is the beauty of Buddha bowls in that they are balanced, nutritious, delicious, and they are known to make you happy just looking at them!
Buddha Bowl Basics
*Pick a grain or starchy vegetable
*Choose some colorful veggies/fruit
*Add your favorite seeds/nuts
*Add some protein
*Choose your garnishes and finishing touches to complete your unique masterpiece!
*Drizzle your favorite dressing over the top and dig in!
Thai Buddha Bowl
Prep: 20 mins Cooking: 8-10 minutes
Serves: 4
Ingredients*
*Please use organic when available
Dressing/Marinade
8 oz organic tempeh
1/3 cup organic almond butter
3 Tablespoons soy sauce
3 Tablespoons fresh squeezed orange juice 3+ Tablespoons water
1 1/2 Tablespoons sesame oil
2 minced garlic cloves
Optional 1-2 teaspoons favorite hot sauce
Bowl
1 Tablespoon coconut oil
1-2 minced garlic cloves
2 cups sliced mushrooms of choice
2 cups chopped broccoli, broccolini or favorite veggies (asparagus, brussel sprouts or green /red peppers delicious too!)
3+ Tablespoons water
1 Tablespoon Soy sauce
6 cups mixed greens
1 cup shredded, spiralized or chopped carrot
2 cups cooked quinoa, rice or grain of choice
1 avocado sliced or chopped
Directions
Chop the tempeh into small cubes. Mix the dressing and marinade ingredients together. Divide the dressing in half & toss the the tempeh in one half and marinate for at least 20 minutes. You can marinate overnight for richer flavor. Save the remaining dressing in your refrigerator.
Tempeh prep ~
Heat oil in a large pan over medium-high heat. Be sure each of the tempeh cubes are laying in the pan face down not on top of each other. Cook for 3 minutes then turn over and cook for 3 more minutes. Transfer the tempeh to a bowl. To the heated pan, add the garlic, mushrooms and broccolini/veggies of choice. Sauté for about a minute then add the water and let it steam for 2-3 minutes. Drizzle the coconut aminos or soy sauce over the mixture and stir for about a minute. In another bowl arrange the grains on the bottom, adding the greens, carrots and topping it off with the with the tempeh, mushrooms and broccolini. Garnish with the sprouts on top. Drizzle remaining dressing over the bowl and add sliced or chopped avocado.
