Minestrone Magic Made With Love❤️

INGREDIENTS

2 tablespoons olive oil

1 yellow onion diced
-
4 cloves of garlic minced
-
2 cups mushrooms sliced
-
1 cup sliced carrots
-
1 cup chopped celery
-
6 cups vegetable broth vegetable broth
-
28 ounces diced tomatoes with juices
-
¼ cup tomato paste
-
1 tablespoon Italian seasoning
-
½ teaspoon crushed red pepper
-
15 ounces canned kidney beans drained
-
15 ounces canned great northern beans drained
-
15 ounces canned garbanzo beans drained
-
¾ cup frozen cut green beans
-
½ cup gluten free small pasta shells or macaroni
-
1 small zucchini halved and sliced
-
2 large handfuls fresh baby spinach
-
1/2 cup parsley finely chopped
INSTRUCTIONS
-
Chop and prepare all necessary ingredients.

Set a large 6-8 quart soup pot over medium heat.

Add olive oil to the pot. Once hot, add the chopped onions, carrots, celery, garlic and mushrooms and saute for 5-7 minutes until tender.

Add in the vegetable broth, diced tomatoes, tomato paste, Italian seasoning, and crushed red pepper.

Stir in the kidney beans, great northern beans, garbanzo beans, green beans and bring to a gentle boil.

Reduce heat and simmer for 10 minutes.

Add the cooked pasta, sliced zucchini, chopped spinach and parsley

Stir until the spinach has wilted

Season with salt and pepper to taste
This soup recipe is great to make in batches and keep in the refrigerator and freezer. Store in airtight containers in the refrigerator up to 5 days or in the freezer up to 3 months.
