RECIPE #1 VEGAN BUTTER FOR SILICONE MOLDS
PREP: 10 minutes
CHILL: 8 hours
YIELD: 10 ounces
INGREDIENTS
*1 cup 'refined' coconut oil
*Note: In both recipes 'refined' coconut oil will minimise the coconut taste that using extra virgin cold pressed oil can add. If you like the coconut flavor by all means use the EVOO.
*2 tbsp canola or avocado oil (olive oil can be used and will make your butter more savory but wait until the end to add to the mixture to avoid a bitter taste).
*1/3 cup unsweetened plant based milk of choice
*1 tsp apple cider vinegar
*1 tsp nutritional yeast
*1 pinch turmeric for color
*pinch of salt
INSTRUCTIONS

Add melted refined coconut oil to your blender or food processor together with the canola, avocado or olive oil.

Mix and stir the apple cider and the plant based milk giving it time to curdle into a plant based buttermilk and add to the blender or processor.

Add nutritional yeast, turmeric and salt.

Blend until smooth.

Pour into a bitter dish or silicone molds of choice and refrigerate until set.

Remove from fridge and let the butter sit out to soften up a bit to make it easier to remove from molds and spread.
OPTION FOR MORE SPREADABILITY
If you want your butter to be more spreadable out of the fridge reduce the coconut oil to 1/2 cup and increase the canola or avocado oil to 1/2 cup and the rest of the recipe stays the same.
Vegan butter will last up to 2 weeks in the refrigerator in an airtight container.
You can freeze up to 3 months.
Mix plant based milk with apple cider vinegar to curdle the milk producing buttermilk
Blend until smooth all the ingredients including plant based milk mixed with apple cider vinegar
RECIPE #2 FLUFFY & CREAMY VEGAN BUTTER
Whipping incorporates air into the butter making it more spreadable directly out of the refrigerator👍
Fluffy, Rich & Creamy
PREP: 15 mins
CHILL TIME: 8 hours
YIELD: 2 cups approximately
INGREDIENTS
*1 cup refined coconut oil melted* *

*1/2 cup canola or avocado oil
*1/4 cup non-dairy plant based unsweetened milk
*pinch of turmeric
*pinch of salt
INSTRUCTIONS

Whisk all the ingredients together until well blended

Refrigerate for 15-20 minutes until slightly firm.

Use a stand mixer with a whisk attachment or a hand mixer with the double beater attachments and whip vegan butter for about 2 minutes until fluffy. This whipping step incorporates air into the butter making it more spreadable directly out of the refrigerator.

Store in a refrigerator safe air tight container and smooth out the top with a spatula

Chill in the fridge for 8 hours or overnight
CREAMIER OPTION FOR RECIPE #2
Replace up to 1/3 of the coconut oil with coconut cream.
This recipe #2 will last the same as recipe #1 up to 2 weeks in the refrigerator and 3 months in the freezer.
Option 2 for Creamier Butter
Vegan butter recipe #2 will last the same as Vegan Butter recipe #1 which is up to 2 weeks in the refrigerator in an airtight container.
You can also freeze up to 3 months
