Do you love noodles but they don't love you back? I'm half Italian and I love me some pasta but... it doesn't serve me well in how I feel after I eat it. So when we discovered a plant based replacement, we were over the moon and back!
This guilt free yummy noodle bowl is super easy and versatile for both meat and plant eaters. This dish as with most of TWH's recipes is meant to be 'KISSED' (keep it super simple every day) proof;-) It's very basic utilizing spiralized zucchinis aka 'zoodles' as the base to begin creating your own delicious and nutritious masterpieces! You can use zoodles in any dish that you have used traditional pasta in. They are delicious with marinara sauce and meatballs, added to chicken soup after it's heated to retain their chewy texture and great in salads or served as a side dish with a drizzle of olive oil, fresh minced garlic and chopped basil ~ YUM😋
I have included 2 choices of dressings for variety and you will also learn how easy it is to make your own tasty dressings in minutes!
Lily TWH’S Assistant Loves Her Zoodles🐾
Zoodle Noodle Salad Bowl*
Servings 2
Prep 10-15 Minutes
Ingredients
2 zucchinis spiralized
2-3 carrots shredded
1 medium red pepper thinly sliced or chopped
1 medium green pepper thinly sliced or chopped
2 green onions chopped
1/2 cup cilantro chopped
Optional
Meat Lovers
2 chicken breasts pre-baked or grilled shredded or chopped
Plant Lovers
1 medium yellow or orange bell pepper for more color and nutrients
15 oz can of beans of choice rinsed & drained
1 tbsp each - hemp, sunflower, pumpkin seeds or seeds or nuts of choice
Sesame Lime Dressing**
4 tablespoons soy sauce
4 tablespoons rice vinegar
2 tablespoons lime juice
2 tablespoons sesame oil
2 tablespoons toasted or untoasted sesame seeds
Tangy Soy Peanut Dressing
2 tbsps soy sauce or coconut aminos
1/4 cup creamy peanut butter
1 tsp fresh ginger minced or 1/4 tsp ground
2 tbsps rice vinegar
1-2 tsp sesame oil (can use toasted if preferred)
1 tbsp minced garlic
2-3 tbsps hot water
pinch of sea salt to taste
Directions
In a large or individual bowls add the zoodles, peppers, green onions and optional ingredients of choice.
Whisk the chosen dressing ingredients together until well blended. When mixing the Tangy Soy Peanut dressing, you may find it easier to blend in your food processor. If dressing is too thick add a bit more hot water to thin being careful not to add too much.
Pour dressing over the top and garnish with cilantro and a sprinkle of sesame seeds and your guilt free noodle bowl is served!
