Have you ever been asked to bring a salad to a holiday event or party and you're tired of taking the SOS salad you always take? This is a nice change and you can make it for vegetarians or meat lovers. A very basic meal that you can add to as little or as much as you like. This is recipe to use your leftover turkey in. Thinking ahead, you can double up on the recipe and store in mason jars ready to grab on the go during the busy holiday season. Add the dressing and the garnishes when ready to serve. This salad will last in the refrigerator for up to 4 days.
Yummy & Easy Turkey or Vegetarian Red Quinoa Salad
Ingredients*
1 cup drained & rinsed red quinoa
2 cups chicken, turkey or vegtable broth to cook the qunioa in
Optional for meat lovers 1 cup chopped turkey
1 15 oz can black beans rinsed & drained
1 pint halved grape tomatoes
Optional 2 cups cooked, roasted or raw corn (omit if tracking carbs)
1/2 cup chopped red onion
1 jalapeno seeded & minced
Garnishes
1/2 cup chopped cilantro
1 avocado cubed
*Please opt for organic ingredients when available
Salad Dressing
1/2 cup olive oil
1/4 cup apple cider vinnegar
3 tablspoons water
2 tablespoons freshly squeezed lime juice
1 teaspoon cumin
1 teaspoon turmeric
1-2 minced garlic cloves
Sea salt and pepper to taste**
**Be sure & add pepper to help your body absorb the turmeric which helps reduce inflamation.
Directions
Add 1 cup rinsed & drained quinoa to the 2 cups broth of choice in a saucepan and bring to a boil. Reduce to simmer, cover and cook until all the broth is absorbed. You can mix the rest of the salad ingredients while the quinoa is cooking and later add once cooked and cooled.
Whisk the salad dressing ingredients together. Add & toss when the salad is ready to be served. Garnish with cilantro & avocado. Squeeze & drizzle lime wedges over top & your salad is ready to dive into! Perfect salad for busy schedules.
