Vegan Mac & Cheese That Loves You Back!

Cook Time: 10 mins
Total Time: 35 minutes
Yield: 4 servings
Ingredients
Dairy Free Vegan Cheese Sauce
3/4 cup peeled and cubed or diced sweet potatoes
3/4 cup peeled and cubed or diced Yukon Gold potatoes
1/4 cup raw cashews
2 garlic cloves peeled
2 tablespoons nutritional yeast
1/2 teaspoon onion powder
1/2 teaspoon sea salt
1 tablespoon apple cider vinegar
1/4 cup extra virgin olive oil
1/4 cup water
Pasta
12 ounces gluten free elbow macaroni or desired shape
Instructions

Place the Yukon Gold potatoes and the sweet potatoes in a pot and cover with water by 1 inch.

Add a dash or two of salt and bring to a boil.

Reduce heat and simmer or about 10+ minutes, uncovered until potatoes are tender with a fork.

Drain potatoes and place them in a high speed blender or food processor along with the cashews, garlic cloves, nutritional yeast, onion powder, salt, apple cider vinegar, extra virgin olive oil and water. Blend until smooth and creamy.

Prepare the pasta bringing a large pot of salted water to a boil. Cook the pasta until it's al dente. Before draining keep 1/2 cup of the pasta water.

Drain the pasta and placeit back in the pot. Stir in the vegan cheese sauce adding pasta water as needed to thin the sauce if desired.
Optional
Add some steamed broccoli on top
Season to taste
Crushed red pepper flakes are great to spice it up!
