Taco Salad in a Jar
This is my grand finale of my recent FB live series on salads in a jar. Who doesn't love taco salad! What is so awesome about salads in a jar is that they can be made 3-5 days before and ready for you to grab & go or serve as a quick dinner with minimum clean up. TWH's mission👍
TWH's goal is to provide you with easy basic recipes that you can dress up as you like and create your own 'masterpiece'❤️
Taco Salad in a Jar
Servings 4
Prep Time 20 minutes
Lime Jalapeno Vinaigrette
Ingredients*
1/4 cup apple cider vinnegar
1/4 cup water
1/4 cup lime juice (1 medium size lime juiced)
1/2 cup EVOO
1-2 cloves garlic minced
1 jalapeno seeded and minced
1/4 teaspoon salt
*Please use organic ingredients when available
Mix all ingredients in container of choice. TWH likes to use Mason jars for easy mixing & storing. Shake until well blended.
Taco Salad Ingredients
1/2 cup chopped cilantro
1 cup diced red onion
2 cups shredded or cubed chicken
**optional 1 15 0z can black beans or beans of choice rinsed & drained
1 cup sweet corn
3/4 cup cherry tomatoes sliced or chopped tomatoes
1 cup chopped peppers of choice red, green, orange, yellow or mixed
1 cup shredded Mexican cheese
1-2 heads romaine lettece chopped
***optional 1 cup rice, quinoa or tortilla chips
Instructions
Pour 3-4 tablespoons salad dressing in the jar
Layer the ingredients in the order above dividing evenly between 4 servings & topping with grains or tortilla chips if desired.
Place air tight sealed lids on jars and keep refrigerasted until ready to serve.
Salads will last up to 3-4 days but if you want them to last longer than 1 day omit salad dressing and add when served.
To Serve
You can easily shake the ingredients andEat out of the jar or pour out onto a plate or bowl over chips, rice or other grain if preferred. ~❤️~
