Coconut wraps filled with vegan tuna salad
This delicious vegan alternative for tuna salad also known as Chickpea of the Sea is not only easy it's healthy too!
Chickpeas are high in protein and they provide a rich source of vitamins, minerals and fiber so they are an excellent replacement for meat or fish. This versatile salad can be a used in sandwiches, as a spread, a dip, in wraps, or piled on top of a bed of your favorite greens.
Super Bowl Ideas:
*Boat Appetizers ~ Fill avocados, celery stalks, romaine lettuce, sweet and bell peppers or hard boiled eggs
*Spread on top of sliced cucumbers, zucchinis or spread and rollup in coconut or nori sheet wraps.
Dip for your favorite dippers😋
This simple vegan tuna salad is so adaptable that you can be as creative with it as you like and you can add your favorite add ins to create your own masterpieces!

Vegan Tuna ~ Chickpea of The Sea Salad
Time: 15 minutes
Ingredients
1 15 oz can chickpeas (garbanzo beans)
1/4 cup celery chopped
1/3 cup green or red onions chopped (see which you like most:)
1-2 garlic cloves minced or 1/4 - 1/2 tsp garlic powder
1/4+/- cup vegan mayo*
2 teaspoons stoneground, dijon or horseradish mustard
1+ tablespoon fresh lemon juice
Sea salt and pepper to taste
coconut, spinach or nori sheet wraps
Optional Ingredients
1/2 cup chopped carrots
1/2 cup chopped bell peppers
1/2-1 jalapeño and finely minced
1 Tbsp hemp, chia seeds or sesame seeds
Handful sunflower or pumpkin seeds
Olives chopped or sliced
Dill pickles chopped
*Mayo alternative - 1/3+/- cup hummus or tahini mixed with a bit of water (1-2+ tablespoons)
Dip Garnish Ideas
Chives minced
Green or red onions minced
Finely chopped seeded jalapeno
Sesame seeds
Crushed red pepper
Wrap Garnish Ideas
Olives
Plum tomatoes
Paprika
Red cayenne pepper
Cayenne Pepper
Directions
*Drain, rinse and strain garbanzo beans then pour into a bowl big enough to mash
*Begin mashing with a fork, potato masher or pastry blender. You can leave some less mashed or whole for a chewy texture.
Note: you can use a food processor to mash them quicker and make it easier however you will want to pulse and avoid over processing unless you prefer a smoother salad with less texture.
*Add the rest of the ingredients
*Add more water or mayo for a moister salad
*Garnish and serve❤️
