Crockpots are a great time saver on those busy and crazy days that leave you with no time to prepare a healthy meal for you and your family. This 'Bean and Lentil Tortilla Soup' is a simple and delicious favorite at our house. I have had fun experimenting and creating different versions of this basic recipe which you can feel free to do so also. You can add more vegtables and experiment with seasonings to create your own spin of this delicious and easy recipe! The lentils together with the meat add more protein and blend in perfectly for a vegetarian version. You can omit the chicken broth and use vegetable broth if you want to keep it strictly vegetarian. Super easy and it makes enough for lunches and dinners for the week. It will last up to 5 days in an airtight container in the refrigerator.
Slow Cooker Bean & Lentil Tortilla Soup*
Prep Time 10 minutes
Cook Time 4-6 hours CP/18 minutes IP
Servings 4
**Ingredients
2 tablespoons extra virgin olive oil
1 cups diced yellow onion
2-3 cloves garlic minced
1 cup chopped celery
1 cup chopped carrot
1 cup each chopped red and green bell peppers
1 cup lentils rinsed
1 can rinsed or 1 cup cooked black beans
1 can rinsed or 1 cup cooked pinto beans
Optional Meat Version - 2 cups precooked shredded chicken or pork
1 14+ oz jar or can (check label for BPA free if using canned) strained, crushed or diced tomatoes (we like to use fire roasted for added flavor)
6 cups chicken broth (vegetable broth for vegetarian)
1 seeded & minced jalapeno
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon sea salt to taste
1/4 ground pepper to taste
Garnish Ideas
Sliced avocado
1/4 cup chopped cilantro
Exekial 4:9 Sprouted Grain Tortillas cut into thin strips
Crumbled goat or sheep cheese
Chopped spinach
Lime wedges
Directions
Instapot
Add all the ingredients except garnishes and set pressure vent to Sealing and press Pressure Cook on High or Manual for 18 minutes. Allow pressure to naturally release or to save time you can do a Quick Release by turning the pressure valve to Venting which will take about 4 minutes being careful keep away from the steam. You can use a wooden spoon to turn the valve to avoid getting burned.
Crockpot
Place all the ingredients into your crockpot and cook on high for 4-6 hours. Check if lentils and vegetables cooked to desired consistency at 3.5 hours to avoid overcooking. If using uncooked chicken or pork, once completely cooked through shred before serving.
Serve with tortilla strips topped with avocado, crumbled goat/sheep cheese, cilantro and a splash of lime

A dash of cayenne for more spice!
