- 1 bunch green onions, green and white parts chopped
- 1 cup kalamata olives

For the Mediterranean Vinaigrette:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced

1. Combine all salad ingredients in a large bowl. If you spiralize your own zoodles lay them out on a paper towel to absorb the moisture for 10 -15 minutes. Pat dry.
2. In a separate bowl or mason, whisk/shake together the olive oil, red wine vinegar, minced garlic, salt, and pepper.
3. Drizzle the vinaigrette over the salad and toss to combine.
4. Garnish with feta cheese and serve.
