Chia seeds are packed full of healthy nutrients and because they absorb up to 9 times their weight in liquid, they are are an excellent 'clean' and healthy food choice for puddings that is very similar in texture to tapioca. They offer up very healthy omega-3 fats, protein, fiber, antioxidants and calcium.
You can vary the amount of liquid you prefer depending on how thick you like your pudding to be.
Once you've added your liquid be sure you mix the ingredients thoroughly and then let it sit for several minutes and mix again making sure you blend well and break up any clumps that may be forming. Repeat this procedure 1-2 more times as needed and than let it sit covered for at least 10-15 minutes. Ideally make it ahead of time like the day before and let it sit in the refrigerator. The pudding will last for several days stored in a airtight container in your fridge if it isn't eaten before!
Vanilla Chia Seed Pudding*
Serves: 4
Prep: 10 minutes
1 cup coconut milk or nut milk of choice
4 tablespoons chia seeds
2 tablespoons maple syrup or honey or favorite sweetener of choice
1 teaspoon vanilla extract
Optional
1/4 teaspoon cinnamon
Chocolate Chia Seed Pudding
Serves: 4
Prep: 10 minutes
1 cup coconut milk or nut milk of choice
4 tablespoons chia seeds
2 tablespoons maple syrup, honey or favorite sweetener of choice
1 teaspoon vanilla extract
2 tablespoons cocoa powder
Optional
1/4 teaspoon cinnamon
Directions
Whisk all the ingredients together being very careful to blend well. Let it sit for a couple minutes and mix again to prevent clumping. Repeat this process 1-2 more times as needed and let the pudding sit covered for at least 10-15 minutes or overnight in your refrigerator.
Garnish with berries, banana slices, coconut flakes, chocolate shavings, chocolate chips or a drizzle of maple or chocolate syrup.
