ITALIAN CHICKEN CACCIATORE
My Italian father and my Italian grandmother made such delicious Italian fare that was unbelievably squisito! They didn't use written recipes but made up their own with a handful of this and a pinch of that. So I set out recently to replicate or come close to their original versions. What I was pleased to discover taking a class to learn Italian and their culture, is that's the traditional way of Italian cooking. Cooking is considered to be an art and the chef is the artist. Therefore each creation is a masterpiece in and of itself and distinctly buono on its own❣️
The trick I found in acquiring that delectable Italian flavor is adding a little bit of wine that adds a distinct delicious taste that had been missing in my previous attempts🍷 No worries regarding the alcohol as most of that will evaporate during cooking.
This is a basic recipe to get you started that you can experiment dressing up or down depending on your creativity and tastes❣️

Ingredients
3 lbs boneless chicken thighs or breasts or combination
3 Tablespoons EVOO
1 medium yellow or red onion chopped
4-6 cloves garlic minced
1 large green bell pepper seeded and chopped
1 large red bell pepper seeded and chopped
Note: You can use a combination or 2 green, red or yellow bell peppers if preferred
16 ounces whole or sliced baby bella mushrooms
1 28 ounce can crushed tomatoes
1 15 ounce can tomato sauce or additional crushed tomatoes
3/4 cup dry white wine or red (red will provide a deeper flavor)
Note: My Dad always cooked with the wine he was going to drink❣️
3 teaspoons Italian seasoning
2 bay leaves
1/2+ teaspoon salt to taste
Optional
Extra Veggies - carrots, celery or any hearty vegetables you want to add
1 can garbanzo beans
1 can pitted black olives
1/2 tsp red pepper flakes for spicer version
Serving Base
Pasta of choice
Zoodles - spiralized zucchini
Baked spaghetti squash
Cauliflower Rice or Mashed
Rice
Mashed potatoes
Polenta
Garnishes
Chopped fresh Italian parsley
Basil
Grated Parmesan cheese
Crumbled goat or sheep cheese
Instructions
*Heat 2 tablespoons olive oil in a Dutch Oven or deep pot on medium.
*Season chicken with salt and pepper, turn up the heat and add chicken to the hot oil searing each side for 2-3 minutes or until browned. Remove and place chicken in a separate container.
*Reduce heat and add another tablespoon olive oil and saute the onions until transparent and add the garlic for a minute. Add in the bell peppers and mushrooms and cook until just beginning to soften being careful to not overcook if you like your veggies not mushy.
*Add in the seasonings and stir to combine
*Add wine and let simmer for about 4 minutes. Scrape the bottom of the pot to loosen all the flavorful bits that you will want to keep in your sauce!
*Place the chicken back in the pot and add crushed tomatoes and tomato sauce making sure the chicken is fully covered. You can add additional water or chicken broth to add more volume.
*Bring to a boil and reduce heat to simmer on low uncovered for an hour or until the chicken is completely cooked through.
*Chicken can be shredded or served whole.

Serve over delicious base of choice, add a sprinkle of favorite shredded cheese, fresh basil or Italian parsley 😋
