Holly Jolly Nourishing Holiday Muffins
Servings: 6+ depending on size of molds
Prep: 10 minutes Cook: 20 - 25+ minutes
Ingredients:
- 10 large eggs
- 1/2 cup of milk (any variety to suit dietary needs)
- 1/2 cup of diced red bell peppers
- 1/2 cup of diced green bell peppers (for that festive color!)
- 1/4 cup of finely chopped spinach
- 1/4 cup of diced onions
- 1/2 cup of shredded cheese (optional, can use dairy-free cheese as an alternative)
- Salt and pepper to taste
- 1 teaspoon of olive oil (for greasing the muffin tin)
- Optional: diced cooked turkey, chicken or bacon for an extra protein boost
Instructions:
1. **Preheat the Oven:** Start by preheating your oven to 375°F (190°C). This ensures your muffins cook evenly.
2. **Prepare the Veggies:** Wash and dice the bell peppers, onions, and spinach. The more colorful, the better – not only do they add a festive touch, but they're also packed with vitamins.
3. **Mix the Eggs:** In a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
4. **Add the Goodies:** Fold in the diced vegetables (and meat if using) into the egg mixture. Stir in the shredded cheese last to evenly distribute.
5. **Grease the Muffin Tin:** Lightly grease a 12-cup muffin tin with olive oil to prevent sticking.
