It doesn't get any easier than this Butter Chicken recipe. Thriving With Health's kind of meal in that it's simple, healthy and a one pot meal you can enjoy delicious leftovers for lunch or dinner. The spices are what makes this dish so tasty and the longer it sits the better the flavor. I like to make it the day before so it can sit overnight marinating in all the delicious spices.
TWH's Healthy Crockpot Butter Chicken
Ingredients
6-8 chicken thighs
1 13.5 oz can full fat coconut
1 6oz can (BPA free lining)** tomato paste
3 tbsps butter, ghee or coconut oil
1 medium onion diced
4-5 garlic cloves minced
1 seeded jalapeno (unless more spice preferred) minced
2 tbsps curry powder
1-2 tbsps chili powder (start with 1 if you're not sure how spicy you'd like. You can always add more later)
1 tbsp garam masala
2 tsps turmeric
2 tsps ginger
1 tsp cinnamon
salt & pepper to taste***
dash cayenne pepper
3 cups cauliflower rice
Optional
1 cup frozen peas added just before serving & let sit for 5 minutes before serving
Garnishes
1/2 cup chopped cilantro
Directions
Crockpot
Place everything except the peas, cauliflower rice, and garnishes in the crockpot and cook on high for 4-6 hours or on low 8-10. Shred the chicken just before serving, add the peas if desired & let sit if added than garnish and serve.
Instant Pot
Place everything except the peas, cauliflower rice and garnishes into the instant pot and cook on high for 25 minutes. Let the steam release naturally.
This dish will get tastier the longer it sits and will last up to 3 days if it doesn't disappear before thanš
*Please use organic ingredients when available
**Check your labels on cans that the lining is BPA free
***You will want to include pepper as it helps the turmeric to be absorbed
