Grain Free Easy & Yummy Chili Pasta Bowl 

Spaghetti squash is an excellent alternative to the grain varieties. The texture is similar to traditional spaghetti and it's easy to prepare. You can bake the squash in it's skin which than can be used as a bowl to serve your sauce, chili or whatever you would like to create.

Thriving With Health likes to liken food preperation to creating a masterpiece and inviting your family & friends to help create too is a great way to get everyone on board to healthier eating and enjoy it together. 

This chili pasta bowl can be made quickly using premade chili or BPA free canned chili. Spaghetti squash can be baked in advance and kept in the refriderator until ready to heat and serve. Pasta sauce works well with these bowls too. It will keep up to 5 days in a covered container in the fridge.

Grain Free Chili Pasta Bowls

Prep: 5 minutes

Cook Time: 40-45 minutes

Servings: 4

Ingredients* 

2 small - medium spaghetti squashes

1 Tablespoon EVOO

4 cups premade chili or 2 15oz BPA free lined cans of chili

Salt & pepper to taste

Garnish Options

Cheese of choice ~ goat cheese a great dairy free alternative

Onions red, white, yellow or green chopped finely

Jalapenos seeded & minced

Avocado slices

*Plz use organic when available

Directions

*Preheat oven 400º

*Line a baking sheet with parchment paper

*Cut the 2 spaghetti squashes from the top through to their bottoms dividing into 4 halves

*Scrape & scoop out the seeds and toss

*Rub the inside of each half with EVOO & sprinkle a dash of salt & pepper if desired

*Place the squash halves cut side facing down on the parchment Note: for dryer spaghetti threads place cut side face up

*Bake 40-45 minutes until done being careful not to overcook the skins

*Heat the premade chili while baking 

*Scrape the squash inside their skin bowl with a fork fluffing into spaghetti

*Pour the chili on top of each spaghetti bowl 1/2 and top with favorite garnishes

😊Entertaining Idea

A great way to serve these entertaining is to have the bowls out on your serving table or island with the chili and perhaps other sauces together with garnish options for your guests to create their own personal masterpieces! Have a contest and vote on whose are the most creative!
