Coconut Milk in Minutes
Coconut milk can be a delicious and a healthy alternative to dairy milk and it's so easy to make. Added bonus is that it's inexpensive to make too. In our family we also prefer to make our own so we know it doesn't contain additives that store bought varieties even organic ones can contain like sugar, carrageenan and guar gum.
Always read the label to make sure. Sugar content can be quite high in ready made nut milks including some organic brands too. If you make your own you can sweeten to taste with you being in control of what you use and how much. Carrageenan is used as a thickener and emulsifier to keep ingredients from separating. It can upset digestion and it may interfere with the microbes in your gut which could lead to obesity and inflammatory related illnesses. Guar gum even organic too can cause bloating and gas related discomfort. If 'natural flavors' are listed on the label beware as that can be a red flag 🚩 to avoid the product. This could mean that there may be up to 100 ingredients that you don't know what they are and some could wreak havoc with your digestion and your health. Making your own is so easy, simply delicious and nutritious when you know what's in it❣️
Coconuts are rich in fiber and contain vitamins C, E, B1, B3, B5 and B6. Minerals include calcium, iron, magnesium, phosphorus, selenium & sodium. Since coconut milk is lactose free, it's a great alternative for those who are lactose intolerant.
Equipment
- Blender or Vitamix
- Measuring cups
- Fine mesh strainer or nut milk strainer bag
- Pitcher or bowl large enough to strain the milk in
- Mason jars or containers of choice for storing
Option 1 ~ Shredded Coconut
Prep: 10 minutes
Servings: 6-8
Ingredients
- 2 cups unsweetened shredded coconut
- 4 hot cups water
*Plz use organic ingredients when possible
Optional Flavoring Bites
- 1/2 tsp vanilla extract
- 1-2 tsp cocoa & 1/2 tsp vanilla
- 1 tsp honey or maple syrup to taste
- 1/2 cup fresh or frozen fruit of choice
- Blended ~
- Peaches
- Cherries
- Strawberries
- Fruit of choice
Directions
Pour 2 cups of shredded coconut into your blender or Vitamix. Add 4 cups water and blend on high for several minutes. If using a Vitamix we use the smoothie setting. Once the milk is thick and frothy pour and strain through a nut milk bag or fine mesh strainer.
Store in mason jars or containers of choice with airtight lids in the refrigerator for up to 3-4 days.

Option 2 ~ Canned Coconut 
Time: 5 minutes
Servings: 6-8
Ingredients
1 BPA free 13.5 oz can unsweetened coconut milk
4 cups hot water
Desired flavoring Bites see Option 1
Directions
Blend on high for 1 minute until well blended.
Option 3 ~ Coconut Manna
Time: 5 minutes
Servings: 6-8
Ingredients
1 cup coconut manna
3+ cups hot water (add more water for less rich milk)
Directions
Place the jar/can of Manna in warm water to soften. Add manna and hot water to blender and blend for 1-2 minutes until well blended.
Delicious served warm with cinnamon & love❤️
