Our star ingredient is the sweet potato. You can also add purple sweet potatoes for variety. Not only does it add a vibrant pop of color to our dish, but it's also packed with nutrients. And the best part? You can leave the skins on, making prep a breeze while adding an extra nutritional boost.
Here's what you'll need:
Ingredients:
- 2 large sweet potatoes orange and purple, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 can black beans, drained and rinsed
- 1 large tomato, sliced or chopped
- 1 jalapeno, seeded and sliced (leave the seeds in if you like it spicy)
- 1 bunch green onions, thinly sliced
Optional - 1/2 teaspoon sea salt
Optional toppings
Guacamole, *Cashew Cream (recipe below), Vegan Cheese, Goat Cheese, chopped cilantro, and fresh lime juice
Simple Dairy Free Vegan Cashew Cream
Ingredients:
- 1 cup raw cashews
- 2/3 cup water
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
Instructions:
1. Soak the cashews in water for at least 4 hours, or overnight if possible. This step is crucial as it softens the cashews and ensures a smoother cream.
2. After soaking, drain and rinse the cashews.
3. Add the soaked cashews, fresh water, lemon juice, and salt to a blender.
4. Blend until smooth and creamy. You may need to pause and scrape down the sides of the blender a few times to ensure everything is well incorporated.
5. Taste and adjust the seasoning as needed. If you prefer a thinner consistency, add a bit more water and blend again.
Use it as a dairy-free alternative in recipes, as a dip for veggies, or as a spread on sandwiches. Enjoy!
Instructions:
1. Preheat your oven to 450°.
2. Toss the sweet potato slices in olive oil and seasonings, then spread them out on a parchment paper-lined baking sheet.

Note:For extra crispy chips once they have baked, broil on high for 3-5 minutes but not too long or they'll burn.
