Delicious Mediterranean Salad in a Jar!
Salads in a jar are the perfect grab and go meal! They're also great for premade lunches or dinners that can be eaten right out of the jar or poured out on a plate or in a bowl and cleanup is a breeze.
If packed properly and stored in an air tight mason jar, salads should last for 3-5 days in the refrigerator.
The Greek vinaigrette dressing is added first and the salad ingredients are layered starting with the heartiest ones and the more delicate on top creating a beautiful and delicious masterpiece as TWH likes to call them!

Prep Time ~ 15-20 minutes
Mediterranean Greek Vinaigrette
Ingredients*
1/2 cup EVOO
1/4 cup apple cider vinegar
1/4 water
1 tablespoon fresh lemon juice (1/2 lemon)
1/2 teaspoon dijon mustard
1 teaspoon dried oregano
1/4+ teaspoon salt to taste
1/4+ teaspoon pepper to taste
*Please use organic when availableš
Whisk in a bowl or add the above ingredients into a glass jar and shake together with the lid securely in place. If time permits, let them stand out and marinate together for a richer flavor.
Salad Fixings
1 red onion diced
1 carton of cherry or grape tomatoes or 2 large tomatoes diced
2 cucumbers chopped
1 15 oz can garbanzo beans rinsed & draineD
1 cup kalamata olives pitted & sliced if preferred or leave whole
3/4+ cup feta cheese crumbled or cubed if preferred
6 cups Romaine lettece chopped
Fresh lemon or lime wedges
Optional
2+ cups shredded, sliced or cubed precooked chicken can be added for extra protein.-
Directions
*Add 2-3 tablespoons (suggest you go light and add more if desired;) salad dressing into each jar.
• Begin layering the ingredients in the order given above starting with the red onions and finishing with the romaine lettece on top.
•Placing in refrigerator overnight will allow the dressing to marinade with the bottom ingredients.
•Salad will stay good for up to 4-5 days
•Serve with lemon or lime wedges drizzled over the top either in the jar or on a plate or in a bowl.
