Want a healthy breakfast that you can 'grab & go' on those crazy and busy days that you need to get you and your family out the door in a hurry?
With a little bit of prep these easy egg muffins aka mini quiches can be a tasty solution and they can save you a whole heck of a lot of time on busy days. They are delicious and nutritious for breakfasts, lunches, dinners, snacks or even appetizers👍 Make a batch that you can freeze ahead so that your family can easily and quickly be nourished when time is limited. Simply warm them up, grab and enjoy! They can be served with salads, steamed veggies, rice, quinoa or eaten deliciously all by themselves!
Simply Delicious Egg Muffin Mini Quiches
Servings: 6+ depending on size of molds and quantity
Prep: 10 minutes Cook: 20 - 25+ minutes
Ingredients:
8 - 10 eggs depending on mold size and quantity
1 tsp coconut oil
1/2 onion chopped
1/2 cup bell pepper chopped red, green, yellow or orange
1 cup broccoli chopped
Salt & pepper to taste
Optional:
1/2 cup chopped spinach
1 jalapeño seeded and finely chopped
1+ garlic clove finely minced
3/4 cup bacon or sausage chopped or crumbled
1/2+ grated cheese of choice (100% feta ~ goat cheese works great if lactose intolerant and if not a digestive issue)
red pepper flakes
Dash or two of your favorite seasonings
Directions:
*Preheat oven 400º
*Use silicone, tin or glass molds and grease well with coconut oil
*Chop vegetables and grate or crumble cheese if using
*Fill each mold with chopped vegetables including cheese if including to about 1/2+ full
*Whisk the eggs together with seasonings and pour evenly into the molds being careful not to fill too much to avoid overflowing while baking
*Bake for 20-25 minutes or until done. The time will vary depending on the size of the molds you are using.
Step 1 ~ Chop and fill molds about 1/2 way and add shredded or crumbled cheese if desired.
Step 2 ~ Add meat, whisked eggs and seasonings. (Bacon, sausage, veggie & egg muffins in red molds and bacon, sausage, grated cheddar & jack cheese in blue heart mold)
Step 3 ~ Bake at 400º for 20 - 25 minutes or until done❤️
YUM!
Baked and ready to eat!

These experiences & challenges fueled my passion to be a life long student in pursuit of learning how to create healthier lifestyles where one can thrive at their optimal best. As a mother of 3 children & a wife of a traveling husband, I quickly learned how to implement healthy habits on the go so that I could be my healthy best for my family. This has evolved into my health coaching business Thriving With Health where I coach people to integrate simple & fun healthy 'bites’ throughout their day even on their most busiest & challenging ones.
