Dairy Free Banana Ice Cream!

 

Do you know anyone who doesn't like ice cream? I sure haven't come across anyone but I do have friends and clients who cannot eat dairy so that could be a problem that can easily be solved. Just the kind of challenge Thriving With Health likes to figure out and resolve😊

Banana ice cream is simple, delicious and nourishing too. Yep ice cream that is healthy without any added ingredients that might be harmful. This ice cream is so super simple it can be categorized under TWH's favorite motto 'Keep It Super Simple' aka KISS. If a recipe has Thriving With Health's KISS of approval than that means this recipe is not only yummy but loves you back with nourishing ingredients, in this case one to start. Yes only one ingredient and maybe a little nut milk or water to thin when preparing. 

The trick is to freeze your bananas that are very ripe but have not turned brown yet. If you use bananas that are not ripe or are too ripe and brown the flavor will be compromised. Simply cut the banana in round slices approximately one inch in diameter, store in a BPA free freezer zip lock baggie or an airtight container and store in the freezer until frozen.

Once the banana slices are frozen (about 2+ hours) put them into your food processor or blender and process/blend until it has reached a soft serve consistency while scraping the sides of the work bowl or blender. You can add a few drops of unsweetened almond or coconut milk to thin as needed. Ice cream is ready to serve soft serve style or you can put it back in the freezer for firmer ice cream. 

Once you are ready to dig your spoon in, this is where the fun begins!

*Experiment adding a tablespoon or two of peanut, almond or cashew butter mixing it together with the banana ice cream and top with your favorite sprinkles.

 

 BANANA & PEANUT BUTTER ICE CREAM WITH CHOCOLATE CHIPS

*Chocolate syrup drizzled over the top or mixed in is so yummy and you could make your own Ice Cream Sunday version that is so delicious you would swear it's not healthy but it is🎉

 

BANANA ICE CREAM SUNDAY 

Banana Ice Cream Recipe

PREP 5 minutes  (2+ hours to freeze)

SERVINGS 2

INGREDIENTS*

2 ripe bananas peeled, sliced and frozen

DIRECTIONS

Peel, slice and store bananas in a BPA free ziplock baggie or airtight container in your freezer. Once frozen add banana slices into your food processor or blender and mix until smooth, scraping the sides of the bowl as needed to blend. You can add a tiny bit of nut milk or water to help thin the mixture if too thick. Mix in any optional ingredients and serve soft serve or for firmer ice cream put it back in the freezer for approximately 1 hour.

 

MIXINGS

Chocolate chips, chunks or nibs 

Peanut, almond or cashew butter

Fresh or dehydrated fruit 

Shredded coconut 

NUTS 

almonds, cashews, peanuts, walnuts or your favorite chopped 

SEEDS

Chia, hemp, pumpkin, sunflower or favorite

FLAVOR BOOST

Drizzle of chocolate, strawberry, raspberry or maple syrup

Bit of honey

Dash of vanilla

Sprinkle of cinnamon, cardamon, pumpkin spice or your favorite

*Please use organic ingredients when available

 

STEP 1 ~ Peel, slice and freeze ripe bananas                          

 

STEP 2 ~ Process until well blended and creamy

  

STEP 3 ~ Ice cream is ready to serve with favorite mixings, toppings and spices😊
