Drain oil from the sun-dried tomatoes if in oil and slice
Heat olive oil on medium ~ saute garlic & sun-dried tomatoes for 1-2 minutes until garlic is golden
Boil cashews for 10 minutes
Blend drained boiled cashews with 1/2 cup fresh water until smooth or less if chewy texture desired
Reduce heat and stir in the cashew cream adding 1 cup water, tomato paste and chopped basil

Ingredients
Cashew Dairy Free Cream
1/2 up raw cashews
1/2 cup water
Sun-dried Tomato Sauce
- 1 tablespoon EVOO
- 7 cloves garlic mashed and chopped
- 1 cup water
- 1/2+ cup sun-dried tomatoes drained if in oil and sliced
- 3 tablespoons tomato paste
- A handful of fresh basil chopped
- Salt & pepper to taste
Directions
- Bring a large pot of water to a boil and cook your pasta or spiralize your zucchini or have your pre baked spaghetti squash scooped and ready to serve.
- Cashew Cream ~ Boil the cashews in water for about 10 minutes until tender and drain. Add the boiled cashews and 1/2 cup of new water to your blender and blend until smooth or if desired less for a chunkier consistency being sure sure to scrape the sides adding to the mix
- Sun-dried tomato sauce ~ Heat the EVOO on medium. Once hot, add the mashed and chopped garlic together with the sun-dried tomatoes. Saute for 1-2 minutes until the garlic is turning golden.
- Lower the heat and stir in the cashew cream and 1 cup of water, tomato paste and basil. Once it comes to a boil, remove from the heat. Serve over pasta or noodles of choice and toss to coat.
You can make this delicious sauce ahead of time and store in an airtight container for up to 4 days or freeze.
