Mango Coconut Ice Cream
Tasty Easy & Quick Strawberry Sauce Option
This is such an easy recipe that is dairy free and it only has 3 ingredients! I've included it as one of TWH's favorites in Samantha's cookbook

Be sure and use full fat coconut milk so it will be thick and creamy. You can also pour into your favorite molds and freeze for creamy popsicles too. A refreshing, tasty treat that is perfect for summer😋
You can opt to use frozen mangos already peeled and cut into cubes and process together with the other 2 ingredients for a soft serve version.
Another option is that you can use fresh mangos and mix together with the coconut milk and honey until well blended.
Pour into a freezer safe container/mold or ice cube trays. It will be frozen in several hours depending on your desired firmness. Since it's dairy free, the ice cream will freeze pretty hard so you may want to set it out for a bit before serving except for the popsicle version which will be deliciously ready to eat!
Once it's frozen, cut into cubes (may want to let it sit for a few minutes to make this easier) and it's ready to serve.
I've included a very tasty and simple strawberry syrup that you can whip up in minutes to drizzle over the top. This syrup is so easy that your kids and grandkids can easily join in to make while they are also learning how to create their own healthy treats too!
Mango Coconut Ice Cream
Time: 10 minutes
Freeze: 1+ hours
Servings: 6
Ingredients
3 cups frozen or fresh mangos peeled and chunked (2 average size mangos)
1 13.5 ounce full fat coconut milk
1/4+/- cup honey or maple syrup or sweetener of choice to taste
Directions
If using fresh mango add all the ingredients to your processor and mix until well blended and smooth.
If using frozen mangos add together with the other ingredients and process until it reaches soft serve consistency scraping the sides of the bowl to include all the mango pieces.
Serve immediately or if mixing fresh pour into a freezer safe container, ice cube tray, favorite molds or popsicle containers. Freeze for 1+ hour or more as needed until frozen to desired firmness.
Strawberry Sauce
Time: 5 minutes
Yield: 1 cup
Ingredients
1 cup fresh or frozen strawberries washed and hulled
1 Tablespoon honey or maple syrup
Directions
Add ingredients to your processor and blend until smooth. Drizzle over your mango coconut ice cream and it's ready for you to serve and take a yummy and delicious bite😋
Note: This sauce is great on pancakes too!
