These Chocolate Chip Oatmeal Energy Balls not only make a delicious and nutritious snack, treat or dessert, they can also serve as a quick grab and go breakfast omitting the chocolate chips (or not;-) in place of a bowl of oatmeal! Super easy to make and super easy to transport.
Chocolate Chip Oatmeal Cookie Ballsā£ļø
Prep: 10 minutes
Yield: 24 balls
Ingredients
2 cups raw uncooked oats
1/4 cup almond meal or favorite protein powder for added protein
1/2 cup nut butter of choice
1/4 cup honey or maple syrup to taste
1/4+ cup water
1/2+ cup chocolate chips or nibs
Directions
Option 1
Mix all the ingredients together until well combined and moist enough to stay together. You may need to add a little more water if too dry. The nut butter you use can affect the moisture depending on how much oil is in it.
Option 2
If you want a smoother texture you can put your oatmeal in your food processor to make it into a flour and blend it together with the other ingredients as directed in Option 1.
Here is where the fun part comes in!
Invite your kids or your guests to roll up their sleeves, wash their hands and dig into the dough, scoop it out and roll into balls.
Place on parchment paper and if you want a firmer texture, refrigerate them for about an hour.

Store in an airtight container up to a week in the refrigerator if not eaten beforeā£ļø
