Dairy Free Chia Pudding!
Pudding for breakfast! Really?
Yes really😋
Chia seeds are packed full of healthy nutrients and because they absorb up to nine times their weight in liquid, they are are an excellent 'clean' (free of harmful processed chemicals) healthier choice for puddings that is very similar in texture to tapioca. They are also gluten free too🙌 For that reason they are an awesome nutrient dense alternative to puddings high in sugar. Chia seeds contain healthy omega-3 fats, protein, fiber, antioxidants and calcium.
This pudding can even be eaten for breakfast too! Can you imagine the looks on your kiddos faces being served chocolate pudding for breakfast❣️ You can reduce the sweetener if you want your pudding to contain less to keep the sugar content lower especially for breakfast.
You can also vary the amount of liquid you prefer depending on how thick you like your pudding to be. Once you have added your liquid be sure you mix the ingredients thoroughly and then let it sit for several minutes and mix again making sure it is well blended and break up any clumps that may be forming. Repeat this procedure 1-2 more times as needed and then let it sit covered for at least 1-2 hours. You can mix in a bowl and transfer to individual containers or you can mix and store all in one Mason jar just make sure you shake it well several times to break up any clumps. Ideally make it ahead of time the day or night before and let it sit in the refrigerator. The pudding will last for several days stored in an airtight container in your fridge if it hasn't been eaten before!
Vanilla Chia Seed Pudding*
Serves: 4
Prep: 10 minutes
2 cups coconut milk or nut milk of choice
1/3 cup chia seeds
1/4 cup +/- maple syrup, honey or favorite sweetener of choice
1 teaspoon vanilla extract
Optional
1/4 teaspoon cinnamon
Chocolate Chia Seed Pudding
Serves: 5
Prep: 10 minutes 1-2 hours to thicken in the refrigerator
2 cups coconut milk or nut milk of choice
1/3 cup chia seeds
1/4 cup +/- maple syrup, honey or favorite sweetener of choice
1/4 cup unsweetened cocoa powder
Optional
1/4 teaspoon cinnamon
Garnishes
Dehydrated coconut flakes
banana slices
berries
chocolate chips or nibs
nuts
seeds
Directions
Whisk all the ingredients together being very careful to blend well. Let it sit for a couple minutes and mix again to prevent clumping. Repeat this process 1-2 more times as needed and let the pudding sit covered for at least 10-15 minutes or overnight in your refrigerator.
