Charcuterie Boards
On a trip recently to Portugal, we had the delight of being served a charcuterie board which are very popular there. When we got back to the states, I had so much fun learning how easy and stress free they are to make! Charcuterie, pronounced shar-koo-tuh-ree, originated in France and Italy has a version of their own called Salumi. The difference being Charcuterie boards typically used cooked meats and pates while the Salumi boards used salted and dry-cured meats. Today it's common to find both on each. They can be veganized to use vegan meat options and cheese choices as well.
What's so fun about making them is that you can create whatever you desire. Every time you make a board you can choose what kind of meats, cheeses, spreads, fruit, herbs and even sweet treats like chocolate that you want. I've included some ideas but feel free to add your own. These are so fun and delicious to serve during the holidays with a theme based board. Set out the fixings and provide mini boards for your family and guests to come up with their own tasty versions. You may want to have a contest and vote on the most creative ones!
It is typical to have a variety of meats and cheeses together with sweet, salty and acidic choices to cut through the fat of the meat and cheese and they can be paired with your favorite red and white wines. This is only a guide to help yu get started since there are no longer any hard set rules here in the states. Have fun and enjoy❤️

Creating a Charcuterie Board ~
Use a large board and smaller ones for individual servings. If using a wood based board, place parchment paper on top to keep it food safe. A round board on top of a lazy susan is a fun way to display and access.
*Set several small bowls of olive oil, variety of mustards, spreads and favorite dipping sauces on the board and arrange the meats, cheeses, vegtables, fruits, figs, nuts, olives, pickles, crackers and breads. You could if short on room, include a basket for the crackers and sliced breads.
Note: Bruschetta works well on these boards too!

About Me
My passion about health started in my teens when I first hand saw the effects of how illness can wreck havoc in a family growing up with parents who had serious health issues. I too struggled with losing weight & developed an eating disorder that I was able to heal by educating myself on healthier habits. It’s amazing what our bodies can do when we learn to take care of them like God intended. These experiences & challenges fueled my passion to be a life long student in pursuit of learning how to create healthier lifestyles where one can thrive at their optimal best. As a mother of 3 children & a wife of a traveling husband, I quickly learned how to implement healthy habits on the go so that I could be my healthy best for my family. This has evolved into my health coaching business Thriving With Health where I coach people to integrate simple & fun healthy 'bites’ throughout their day even on their most busiest & challenging ones. You are never too busy to take care of your health & I can show you how. Everyone has busy lifestyles and living at their optimum best is not only doable but can be fun as well!
