Too Many Ripe Avocados?
No worries, you can freeze them (see below) to use later or you can use them in smoothies, puddings, sauces, salad dressings and even brownies! You might be thinking avocados in brownies? Before you dismiss that thought, try it and TWH bets that you will be surprised and pleased with the result. A rich chocolate brownie that is nutritious and delicious. So when you're craving something sweet whip up these flourless brownies and see what you, your family and friends think. Careful though you may not want to share that there are avocados in them especially with your kiddos! The cool part about eating clean meaning free from any processed chemicals is that you are likely not to overeat them. They don't have any additives that can hijack your brain or your tastebuds enticing you or loved ones to over indulge. This recipe is so easy your kids can make them too.
*Freezing Avocados*
To freeze your ripe avocados before they turn brown, mash or process them until smooth. Add 1 tablespoon of lemon or lime juice to prevent browing and mix in well. You can use white vinegar if lemons or limes aren't available. Store in freezer zip lock bags or you can use an ice cube tray or silicone mold. They can last up to 5 months frozen.
Avocado Flourless Brownies
Ingredients
3 small, 2 medium or 1 large ripe avocado (approximately 3/4-1 cup pureed)
Time: Prep: 10 minutes Bake: 25-30 Total Time: 35-40
Servings: 8-10
1/4 cup melted coconut oil
2 eggs
1/3 +/- cup maple syrup, honey or favorite sweetner
4 tablespoons almond butter or nut butter of choice
Salt to taste if nut butter is without
1/2 teaspoon baking soda
1/3 cup unsweetened cacao or cocoa powder*
*Note: Cacao powder is a bit more bitter than cocoa powder but has more nutritional value. Cacao powder is made from fermented beans that have not been roasted and is processed at low temperatures. Cocoa powder is made from beans that have been fermented, roasted and processed at higher temperatures thus reducing some of the nutrients and has a slightly less bitter taste than cacao but with the sweetener added this is usually not discernible.
1 teaspoon vanilla extract
Optional
1/2 cup chocolate chips, chopped chocolate or nibs for topping
Directions
Preheat oven 350°
Line a baking pan or dish with parchment paper for easier cleanup or oil with coconut oil.
Add avocado 1st to your processor to puree making sure it's well blended without any chunks. You don't want chunks of avocado in your brownies😲
Add the rest of the ingredients except optional chocolate topping and blend on medium using a spatula to scrape down the sides of the bowl and add back into the mix.
Pour batter into your baking pan and top with chocolate or any other favorite toppings like dehydrated shredded coconut or shredded almonds. Be creative😊
Bake for 25-30 minutes until toothpick inserted comes out clean.
Remove from oven and let them cool for about 10 minutes and easily remove from the pan using the ends of the parchment paper to lift out and cut into squares.
Brownies can last up to 1 week or so in an airtight container in the refrigerator.
