This Kale salad is Thriving With Health's kind of recipe! A kiss (keep it super simple) 'health bite' for sure;-) After gently massaging the ingredients into the kale, let it sit out for 15-20 minutes so the leaves can absorb the seasonings and this will remove the bitterness as well.
This delicious salad will keep for several days covered in your refrigerator and it makes an excellent complete meal when protein is added. Including meat of your choice, beans, seeds, or nuts are great sources of healthy added protein choices. You can toss in extra veggies for added nutrients and color to make your masterpiece beautiful as well as nutricious!
Kale is an excellent source of vitamin K, vitamin c, vitamin A, maganese and copper. It's a good source of vitamin B6, calcium, potassium, vitamin E, vitamin B2 and fiber. Additional nutrients include iron, magnesium, omega-3 fats, phosporous, folate, vitamin B1 & B3 and even protein.
TWH's Kiss Kale Salad
Ingredients*
1/2-1/3 cup of extra virgin olive oil
1/4 cup fresh squeezed lemon juice
3-4 cloves garlic mashed & minced
1/4-1/2 tsp sea salt
Dash(s) +/- red pepper flakes
1-2 bunches of Kale with the stems removed**
1/2 cup finely grated Parmesan cheese or crumbled goat or sheep cheese if lacto intolerant
Optional
1 cup of chopped or sliced grilled or baked chicken or meat of choice
1 15 oz drained can of favorite beans (white beans go well with this salad;) rinsed and drained
1/4 cup +/- nuts & seeds
*Please use organic when available.
**Experiment with the different varieties. Tuscan is a popular choice but it's fun to try others;-)
Prep
Place the prepared kale into a large bowl and add the olive oil, lemon juice, garlic, sea salt & red pepper flakes. Toss and gently massage the added ingredients into the kale until well coated. Let the salad sit at room temperature for 15-20 minutes so the kale will continue to soften and absorb the dressing. This will help to remove bitterness as well.
Add optional ingredients as preferred, sprinkle grated cheese of choice and toss.
Garnish with additional grated or shaved cheese before serving.
Cover & refrigerate the remainder and enjoy this salad for up to 2-3 days if it's not devoured before like it is in our house!
