**Why Watermelon?**
In the heart of winter, watermelon brings a burst of summer's sweetness, making it a surprising yet perfect choice for holiday treats. Not only is it hydrating and packed with vitamins, but its vibrant red color also adds a cheerful pop to any festive spread. And when paired with the creamy tang of goat cheese and a sprinkle of herbs, each bite becomes a merry melody of flavors.
**Let's Get Crafting!**
**Ingredients:**
- 1 large seedless watermelon
- 4 oz goat cheese (log form for balls or slices for cut-outs)
- Your favorite herbs for sprinkling (Italian seasoning, cracked red pepper flakes, etc.)

- Small Christmas tree cookie cutters
- Small knife
**Instructions:**
1. **Slice Your Watermelon:** Begin by cutting your watermelon into large, 1-inch thick slices. Lay them flat on your cutting board, ready for shaping.
2. **Shape Time:** Using your cookie cutters, press into the watermelon slices to create your festive shapes or you can cut into triangle trees and use popsicle sticks for the base or leave about an inch in width rind at the base of the stump. If you want to get more creative you can create dimensional trees by layering watermelon pieces. The sky's the limit so go for it and see what you and your loved ones can create!
3. **Goat Cheese Magic:** For goat cheese balls, use a small spoon to scoop balls from the goat cheese log. If you're using slices, gently press the smaller star cookie cutters into the goat cheese to top the tree.
4. **Assemble Your Bites:** Place a goat cheese ball or star atop each watermelon cut-out. If your cheese is in ball form, you might find it fun to gently press it down to create a more "melted" look.
5. **Herb Sprinkle:** Now, for the final touch! Sprinkle your chosen herbs over the bites. Italian seasoning will bring a classic touch, while cracked red pepper flakes add a bit of festive spice. Decorate with rosemary sprigs, mint or basil.
