Salad dressings are so easy to make and they are not only healthier than many store bought ones, they taste so much better too. Most importantly is that you know what ingredients are in them when you make your own.
I can't emphasize it enough for you to always READ your labels before you purchase salad dressings including organic ones. Be on the lookout for ingredients such as 'natural flavors', words you can't pronounce or don't know what they are. Natural flavors means there could be up to '100' ingredients that you don't know what they are including some you or your loved ones may have a negative reaction to such as msg.
Once you make your own you will be amazed how easy it is and you can have fun inviting your family, kids too, friends and guests to be creative and make their own delicious masterpieces. Trust me it's easy, fun & super yummy!
Here is a really quick and easy vinaigrette you can put together in minutes!
Lemon Dijon Creamy Vinaigrette
Prep 10 minutes
Servings 8 (2 Tbsps each)
Ingredients*
3/4 cup EVOO
1/4 cup apple cider or white vinegar
2 Tbsps fresh lemon juice ( 1 medium lemon)
3 cloves garlic peeled & minced
3 Tbsps Dijon mustard
1/4 +/- water to thin if desired
Salt & pepper to taste
Optional Spicier Versions
1/2 jalapeno seeded & minced
Dash Cayenne pepper
* Please use organic when available
Directions
Combine all the ingredients except the water into a high speed blender or food processor. You can whisk the ingredients in a bowl or jar for a chunkier less emusified version that although won't be as creamy is still delicious! Add water a tiny bit at a time if a thinner dressing is desired.
Enjoy on your salads, proteins, grains & eggs too.
