These gluten free brownies contain the magic ingredient of avocados! You might be thinking avocados in brownies? Before you dismiss that thought, try it and TWH bets that you will be surprised and pleased with the results👍

Avocados replace the butter in traditional recipes and they're a healthy source of good fat that gives the brownies a creamy velvety texture that makes them moist and rich!

A chocolate brownie that is nutritious and delicious😋

Yes you can have your brownies and eat them too without guilt❣️

Too Many Ripe Avocados? This is a great way to use them up.

**Too many ripe avocados beyond making brownies? No worries, you can freeze them (see below) to use later in smoothies, puddings, sauces, salad dressings and of course more brownies!

So when you're craving something sweet whip up these yummy treats and see what your family and friends think. Careful though you may not want to share that there are avocados in them especially with your kiddos!

The cool part about eating clean meaning free from any processed chemicals is that you're less likely to overeat them because they don't have any additives that can hijack your brain or your tastebuds triggering you or loved ones to over indulge. 

This recipe is so easy your kids can make them too (if they're ok with the avocados🙂).

**Freezing Avocados

To freeze your ripe avocados before they turn brown, mash or process them until smooth. Add 1 tablespoon of lemon or lime juice to prevent browning and mix in well. You can also use white vinegar if lemons or limes aren't available. Store in freezer zip lock bags or you can use an ice cube tray or silicone mold. They can last up to 5 months frozen.

  

 

Love You Back Flourless Brownies❣️

Time:

Prep: 20 minutes

Bake: 30 - 35 minutes

Servings: 8x8 pan yields approximately 12

Ingredients

3/4 cup mashed ripe avocado without brown spots (about 1 medium avocado)

2 large eggs

1/4 cup melted coconut oil

1/3 cup maple syrup, honey, coconut sugar or favorite sweetener

1 teaspoon vanilla extract

1/4 cup unsalted and unsweetened almond butter or nut butter of choice 

1/2 teaspoon baking powder

1/4  teaspoon salt if nut butter unsalted 

1/2 cup unsweetened cacao or cocoa powder*

*Note: Cacao powder is a bit more bitter than cocoa powder but has more nutritional value. Cacao powder is made from fermented beans that have not been roasted and is processed at lower temperatures. Cocoa powder is made from beans that have been fermented, roasted and processed at higher temperatures thus reducing some of the nutrients and has a slightly less bitter taste than cacao but with the sweetener added this is usually not discernible.

Optional Ingredients

1 1/2 cups fresh or frozen raspberries 

1/2 cup almond, hazelnut or cashew flour if you want a flour like texture without the gluten or grain and you boost the nutrients from the nuts

1 teaspoon espresso powder or 1/2 teaspoon ground espresso that enhances the flavor but not with an overpowering coffee flavor

Love You Back Healthy Brownie Frosting

(Can be either spread or drizzled)

Ingredients:
1 ripe avocado
1/4 cup of raw cacao powder
1/4 cup of pure maple syrup
2 tablespoons of coconut oil, melted
1 teaspoon of pure vanilla extract
A pinch of sea salt

Instructions:
1. Scoop out the flesh of the ripe avocado and place it in a food processor.
2. Add the raw cacao powder, pure maple syrup, melted coconut oil, vanilla extract, and a pinch of sea salt.
3. Blend until the mixture is smooth and creamy, scraping down the sides as needed.
4. Taste and adjust the sweetness if needed by adding more maple syrup.
5. Once your brownies have cooled, spread the frosting evenly over the top or put the frosting in a piping bag or a ziplock bag with the corner cut off and drizzle it over the brownies.
6. Let the frosting set in the fridge for about 15 minutes before serving.

 Optional Toppings

1/2 cup chocolate chips, chopped chocolate or nibs for topping

Dehydrated desiccated (finely ground) coconut to lightly dust the brownies. You can simply cut out a heart shape (trace if you have heart cookie cutters) using several layered sheets of paper or parchment, place over top of brownie and lightly dust. To save time cut out enough hearts to cover each brownie and dust all at once. use a stencil if you want to

Chopped almonds or walnuts

Hemp, sunflower or pumpkin

Directions

Preheat oven 350°

Line a baking pan or dish with parchment paper for easier cleanup or oil with coconut oil.

Combine in your food processor bowl the avocado, eggs, oil, nut butter and blend until smooth making sure there aren't any avocado pieces. You don't want pieces of green avocado flesh in your brownies😲

Add the rest of the ingredients except optional toppings and blend on medium using a spatula to scrape down the sides of the bowl and add back into the mix. If overmixed the brownies will be more like a cake like texture instead of chewy.

Pour batter into your parchment lined baking pan or into your silicone molds if desired and top with chocolate chips, nibs, nuts or any other favorite toppings you want.

If you want a toasted coconut flavor, dust before baking.

Have fun creating your own versions TWH likes to refer to as your masterpieces😊

Bake for 25-30 minutes until toothpick inserted comes out clean and edges are separating from the sides.

Remove from oven and let them cool for about 10 minutes and easily remove from the pan using the ends of the parchment paper to lift out and cut into squares either before or after or just pop them out of the molds.

Brownies can last up to 1 week in an airtight container in the refrigerator.

 

Blend avocados, eggs, nut butter and oil first

 

Make sure all the avocado flesh is well blended! 

 

Parchment lined pans makes it so easy to lift brownies out and cleanup is a breeze!
