These simply delicious and nutritious muffins are a healthy breakfast that you can 'grab & go' on those crazy busy days you need to get you and your family out the door in a hurry or they can be a quick tasty lunch or dinner paired with a beautiful colorful salad❣️
With a little bit of prep these easy muffins aka mini quiches can be a tasty solution and they can save you a whole heck of a lot of time prepped in advance.
They are perfect for Valentine’s Day breakfast, lunch, dinner, snacks or even appetizers using smaller muffin pan or molds👍
Make a batch that you can freeze ahead so that your family can easily and quickly be nourished when your time is limited. Simply warm them up, grab and enjoy! They pair well with fruit, salads, steamed veggies, rice, quinoa or delicious all by themselves 😋
LOVE MUFFINS RECIPE
Servings: 6+ depending on size of molds
Prep: 10 minutes Cook: 20 - 25+ minutes
Ingredients:
8 - 10 eggs depending on mold size
1 tsp coconut oil
1/2 onion of choice chopped
1/2 cup bell pepper chopped red, green, yellow or orange
1 cup broccoli chopped
Salt & pepper to taste
Optional:
1/4 cup chopped fresh or sun-dried tomatoes
1/2 cup chopped spinach
1 jalapeño seeded and finely chopped
1+ garlic clove finely minced
3/4 cup bacon or sausage chopped or 1 brick (8ozs) of tempeh crumbled
1/2 cup grated cheese of choice (100% feta ~ goat or sheep cheese works great if lactose intolerant and if not a digestive issue)
red pepper flakes
Dash or two of your favorite seasonings
Directions:
*Preheat oven 400º
*Use silicone, tin or glass molds and grease well with coconut oil
*Chop vegetables and grate or crumble cheese if using.
*Fill each mold with chopped vegetables including cheese if including to about 1/2+ full.
*Whisk the eggs together with seasonings and pour evenly into the molds being careful not to fill too much to avoid overflowing while baking.
*Bake for 20-25 minutes or until done. The time will vary depending on the size of the molds you are using.
Step 1 ~ Chop and fill molds about 1/2 way and add shredded or crumbled cheese if desired.
Step 2 ~ Add meat or tempeh if using, whisked eggs and seasonings.
Optional: Fill molds first with veggies, meat if using & cheese followed by eggs poured on top.
Step 3 ~ Bake at 400º for 20 - 25 minutes or until done❤️
