Simply Delicious Chicken Veggie Soup
Chicken veggie soup soothes and nourishes your body and your soul!
It's easy to make in batches so you can freeze and have quick nutritious and delicious meals on busy days!
You can make it in your slow cooker, quicker in your Instant Pot or even on the stove.
Spice it up as much as you want adding more or less as desired.
Add your favorite garnishes creating your own simply delicious masterpiece mealš
Servings: 6
Ingredients*
2 Tbsps EVOO
1 medium-large yellow or red onion chopped
4+ cloves garlic minced
Optional:1 Jalapeno seeded & minced (will add some spice but not too hot if seeds removed)
2 cups carrots sliced or chopped
2 cups celery sliced or chopped
1.5-2 lbs boneless & skinless chicken breasts precooked shredded or if time permits raw
64 ounces chicken/bone broth
1/2 tsp crushed red pepper flakes
1 tsp turmeric
1/2 tsp chili pepper
1/4 tsp cayenne pepper
1/4 tsp pepper (promotes turmeric being absorbed in your body)
Salt to taste
Garnish Ideas
1/2 cup chopped cilantro
Lime or lemon wedges
Avocado slices
Crushed Red Pepper Flakes
Goat Cheese
Green onions thinly sliced
Chives minced
Jalapeno seeded and finely minced
Fresh Dill
*Plz use organic ingredients when available
Directions Option 1 Crock Pot
If time permits you can saute the onions, garlic & jalapenos in olive oil until tender but if you're in a hurry add all the ingredients into your crockpot, stir & turn on high for 4-6 hours or low for about 8. Check about 1/2 way through to see if veggies are cooked to desired tenderness. If you are using raw chicken, check for doneness in about 3.5+ hours and shred if completely cooked, stir back into soup or wait until serving. We like our veggies a bit undercooked so we usually turn the slow cooker to warm once they're done to our liking.
Note: if you prefer less cooked veggies add carrots & celery 1/2 way through
Faster Option 2 Instant Pot
*Place veggies in the bottom of your Instant Pot.
*Top with chicken, herbs & spices
Note: if chicken frozen cook for 35+ minutes
*Add chicken/bone broth
*Select 'Soup' and cook for 30 minutes.
*Let it slow release or choose quick release
*Shred chicken and stir back into the pot
*Salt and pepper to taste
Chopped spinach or kale is delicious to add just before serving letting it soften & wilt from the heat or you may enjoy it raw as a garnish on top. Feel free to add any of your favorite veggies. This is a basic template for you to create your own masterpiece. The magic begins with the spices and seasonings. Experiment with starting small, being bold and adding more. That's where the fun begins when you create your own favorite delicious versions!
