Watermelon and Cheese Appetizers or Snacks
This is Thriving With Health's kind of recipe that I like to call a 'kiss' recipe meaning keeping it super simple. This tasty treat is just that! This can be a snack or an appetizer that is great to serve on hot summer days. All you need is cubed watermelon, some creamy goat cheese and some pistachios to garnish on top and that's it.

Watermelon and Goat Cheese Appetizers
Time: 5 minutes
Servings: This will depend on the size of your watermelon and the size of your cubes that you cut
Ingredients*
1 watermelon cut into approzimately 1 - 2 inch cubes
4 - 8 oz of spreadable goat cheese**
**Note: if lactose intolerant make sure your goat cheese is 100% goat's milk and not combined with dairy so be sure to check the label.
1/2+ cup shelled whole pistachios raw or roasted, salted or unsalted whatever you prefer
Optional
Thinly sliced or chopped red onion for additional flavor
Salad dressing of choice for dipping. Vinaigrettes are great!
*Please use organic ingredients when available.
Directions
Roll up small dollops of goat cheese and place on the watermelon cube or you can spread the cheese on top if time permits. If the cheese is too crumbly or challenging to spread, you can heat it up either in a double broiler or in the microwave until it becomes spreadable but be careful it doesn't burn.
Top each cube with 1 or more pistachios depending on the size of the cube. Note: You could chop the nuts for a crunchier version.
Optional
Add thinly sliced or chopped red onion and drizzle your favorite salad dressing on top.
Balsamic vinaigrette is a delicious compliment❤️
