🍀 Go Green Deliciously St. Patrick’s Day 

St. Patrick’s Day doesn’t have to be just about green food coloring and shamrock-shaped cookies. This year, let’s go green the healthy way! Add natural goodness to your plate with these vibrant recipes that celebrate the color of spring — and nourish your body too. 💚

Perfect for parties, family dinners, or a fun afternoon with kids!

 

🥬 1. Glowing Green Juice

Serves: 2
Prep Time: 5 minutes

Ingredients:

  • 1 green apple, chopped
  • 1 cucumber, peeled
  • 1 cup baby spinach
  • ½ lime, peeled
  • 1-inch fresh ginger
  • 1 cup coconut water or cold water

Instructions:

  1. Add all ingredients to a blender or juicer.
  2. Blend until smooth. If you want it lighter, strain for a refreshing juice — or keep it thick for a smoothie-style drink.
  3. Pour over ice, garnish with a cucumber slice, and sip the green glow!

Tip: Add a sprig of mint for a festive St. Paddy’s twist!

 

🥗 2. Lucky Green Salad with Lime Vinaigrette

Serves: 4
Prep Time: 10 minutes

Ingredients (Salad):

  • 2 cups baby kale or spinach
  • ½ head romaine lettuce, chopped
  • 1 avocado, sliced
  • ½ cucumber, thinly sliced
  • ¼ cup edamame or green peas
  • Handful of pumpkin seeds or pistachios

Ingredients (Lime Vinaigrette):

  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1 tsp honey or agave nectar
  • Salt and pepper to taste

Instructions:

  1. Whisk vinaigrette ingredients in a small bowl until well blended.
  2. Toss salad ingredients in a large bowl, drizzle with vinaigrette, and serve fresh!

Optional: Add grilled chicken or tofu for a protein boost.

 

🥦 3. Cheesy Broccoli Bites (Kid-Friendly and Magic-Approved!)

Serves: 4
Prep Time: 10 minutes | Cook Time: 20 minutes

Ingredients:

  • 2 cups chopped broccoli florets (steamed & cooled)
  • 1 egg
  • ½ cup shredded cheddar cheese
  • ¼ cup breadcrumbs (or almond flour for gluten-free)
  • Pinch of salt

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Mix all ingredients in a bowl until combined.
  3. Form small patties or “coins” and place on a parchment-lined baking sheet.
  4. Bake 15–20 minutes, until golden brown on edges.
