Simplify meal preparation chopping up veggies and prepping whole grains, beans, legumes and meat ahead of time. Meal time will be a breeze to prepare!
Time: 10 -15 minutes
Yield: 1 1/2 - 2 cups
Ingredients:
1 pineapple diced
1 mango diced
1 red onion diced
3 roma tomatoes chopped
1/2 cup cilantro chopped (reserve 2+ tbsps on the side)
1 jalapeño seeded and chopped finely
1 lime juiced
Directions:
Combine all the ingredients, sprinkle reserved cilantro over the top and dig in!
