Gluten Free Chocolate Chip Pumpkin Cookies
These are so unbelievably easy, delicious, healthy and quick to make! Make sure that your oatmeal is certified gluten free which means it was packaged in a facility that doesn't have gluten products. It will say on the container. This is an easy cookie dough to make ahead of time so you can make and bake them when you want. They bake in 6-8 minutes.

Chill 20 minutes
Bake 6-8 minutes
Total Time 34+ minutes
Yield 24 (small)
Ingredients*
Wet
1 egg
4 Tablespoons honey or maple syrup
1/2 cup BPA free lined canned 100% pumpkin (not pie filling)
1/2 teaspoon vanilla extract
Whisk the above wet ingredients in a small bowl until blended and set aside.
Dry
*1+ cup certified gluten free oat flour (using the chopping blade set food processor on high and blend oats until consistency is like flour)
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin spice
Dash of sea salt
1/2 cup organic semi sweet chocolate chips (we use 51% cacao)
Sift or mix dry ingredients except chocolate chips together in a medium size bowl.
Add the wet ingredients to the dry mixing until blended and stir in the chocolate chips to combine.
Note: Dough will be sticky
Chill for 20 minutes (if still too wet after chilling, add a bit more oatmeal flour)

Instructions
Preheat oven 350°F
Drop teaspoonful size dough onto parchment paper lined cookie sheets and bake for 6-8 minutes.
They will last up to a week in an airtight container in the refrigerator.

Using the chopping blade process on high until oats are a flour consistency.
Mix wet and dry ingredients seperately than mix together stirring in the chocolate chips last to combine.
Chill for 1/2 - 1 hour
Remove from refrigerator and preheat oven to 350°F
Drop teaspoonful size dough onto a parchment paper lined cookie sheet (makes clean up a breeze;-)
Bake for 6-8 minutes
