Easy Peasy Holiday Bites That Love You Back❣️
YUM! Watermelon is a food that you can love and loves you back❤️
This time of year it is even more important to stay hydrated during these approaching winter days. An easy way to get your water is to eat it too! Watermelon is not only hydrating, it contains essential nutrients that include vitamins, minerals and antioxidants.
Watermelon ~
Is about 90% water
Has nutrients and healthy plant compounds
May help prevent cancer
May lower inflamation
May improve heart health
May help prevent macular Degeneration
May relieve muscle soreness
Watermelon is perfect to eat all by itself and it can be a delicious and healthy appetizer or snack that can be prepared in minutes. This recipe is so easy that your kids can make them too. You can easily cut into cubes or you can be creative (this could be an activity to keep the kids engaged) using favorite cookie cutters to cut out different shapes. The bonus is that this can be a learning experience to make healthy snacks! Since TWH's goal is to teach and encourage eating what you will love and what will love you back, hearts are a favorite cutout but any shape will do. A new Holiday Tradition❤️
Watermelon, Goat Cheese Bites
Prep Time: 5-10 mins cutting Assemble: 5 mins
Total Time: 10-15 mins
Ingredients
Watermelon cut in cubes or in cookie cutter shapes
Cream 100% Goat Cheese (be sure and read the label if you want dairy free as some goat cheeses are blended with milk)
1/2 cup nuts/seeds raw or roasted almonds, pecans, pistachios, pumpkin/sunflower seeds, walnuts salted or unsalted
Directions
Roll the creamed goat cheese into little balls.
Place on top of the watermelon cubes or cut outs
Top it off with a nuts or seeds
We first enjoyed these during the summer at a wine tasting event that was held during an extremely hot day. They were so refreshing and we've enjoyed them countless times ever since. I think you will too! They are perfect for the holidays as a guilt and hassle free appetizer!
You can experiment using different nuts or seeds. If you have the time, try spreading a layer of goat cheese on top and sprinkle chopped chives, green onions, cilantro, basil or mint leaves on top with a drizzle of your favorite vinaigrette.
