Who says snacks or deserts can't be healthy & yummy? This homemade chocolate almond bark is not only delicious but it's nutritious too! Almonds are the nuts highest in calcium, contain protein, fiber, vitamin E, unsaturated fat and other vitamins and minerals. Covering them in cacao chocolate adds important antioxidants and together with the coconut oil which is rich in saturated fats, this easy & quick snack or desert can provide you with a powerful and nutritious energetic boost. Coconut oil is an amazing superfood that containins medium-chain fatty acids (MCFAs). These unique fats include Coprylic acid, Lauric acid & Capric acid. MCFAs provide a great source of energy because they can be turned into fuel faster than other fats
Chocolate Almond Bark Easy & Quick Recipe
1/2 cup organic 65% or more cacao chocolate chips
2 tsp organic coconut oil
1 cup of raw organic unsalted almonds
Method
Melt the chocolate and the oil in a double broiler.
Once completely melted add the almonds and stir completely until covered.
Spread the chocolate covered almonds out on a cookie sheet covered with parchment paper and put in the freezer to harden for about 30 minutes
Can be stored in the freezer in a covered container.
