Happy Halloween!
Halloween is usually a crazy busy day to get healthy meals on the table. This year challenged by Covid and quarantine, we may find our Halloween celebrations very different this year. That doesn't mean we can't dstill dress up and enjoy a delisious meal together with our loved ones who are stuck at home with us too! This recipe is so easy! You can make it beforehand or in your crockpot or Instapot.
Mexican Black Bean & Lentil Soup
Serves: 5
Prep: 10 mins
Ingredients*
2 Tablespoons EVOO
1 medium yellow onion diced
3-4 cloves garlic finely minced
1 medium jalapeno seeded & finely minced
1+ cup celery chopped
1+ cup carrots chopped
3/4 cups lentils rinsed
1 15 oz can (non BPA lined) black beans rinsed & drained
2 14 oz jars crushed, fire roasted or strained tomatoes
32 ozs vegetable, chicken bone broth or broth of choice
1 heaping teaspoon ground cumin
1/2 teaspoon ground coriander
Salt & pepper to taste
Garnishes
Sliced or cubed avocado
Goat or sheep cheese
Chopped green onions
Chopped cilantro
Sprinkle of cayenne pepper
Fresh lime wedges to sqeeze over top
Directions
Place all the ingredients in the order listed above into your crockpot and cook on high 4-6 hours checking about 3.5 hours in that the lentils and veggies are near done to avoid overcooking.
