COCONUT ICE NICE CREAM
This simple and delicious creamy and dairy free coconut ice cream also referred to as 'nice' cream, has only 3 ingredients for the basic recipe and you can make it without an ice cream maker!
Options include adding chocolate chips, fruit, nut butter, nuts or seeds.
Play with it and invite your kids to help too. The sooner they can learn to make their own healthy snacks the better!
Prep: 10 minutes
Freeze: 2+ hours until frozen
Servings: 4 - 5
INGREDIENTS
1 13.5 oz unsweetened BPA free liner can of full fat coconut milk
1/4 cup maple syrup
1 1/2 teaspoon vanilla extract
Pinch of salt
OPTIONAL ADD-INS OR TOPPERS
Berries
Chopped fruit
Chocolate chips or nibs
Shredded coconut
Nuts: chopped almonds, walnuts, cashews or pistachios
Seeds: Sunflower, chia, hemp or pumpkin
Nut butter
DIRECTIONS
Add all ingredients chosen to a bowl and stir mixing well. Transfer to silicon molds or ice cube trays. We like to use heart shape and stars to make it more fun!
Freeze for several hours until frozen.
Once frozen you can eat the ice cream from the mold or place them in a high speed blender and eat the ice cream soft serve style or put back in the freezer to firm up for later.
Ice cream will be good for several weeks stored in the freezer in an airtight container.
Pour into a silicone mold or ice cube trays to freeze
Ready to eat❣️
You can place them into your food processor for soft serve style or refreeze to harden up if too soft😋
