Chocolate Chip Pumpkin Protein Cookies!
These no bake protein cookies are simply delicious and nutritious, Thriving With Health's ultimate goal in providing health bites that you can love and they can love you back. These are great for a snack, desert and even a quick breakfast! Best of all you know what's in them and they don't contain any harmful processed chemicals. You can enjoy eating these tasty and healthy treats guilt free because they contain whole, clean and real ingredients. Clean meaning real food ingredients and not fake processed ingredients that were made in a plant that may cause illness and may encourage overeating and weight gain. These are a healthy and nutritious treat that are delicious with a cup of tea, coffee or a glass of nut or oatmeal milk❣️

Chill Time: 1 hour

Ingredients
Wet
1/2 cup organic pumpkin puree
1/2 cup organic unsweetned almond or peanut butter
1/4 cup maple syrup or honey
1 tsp vanilla extract
Dry
1 3/4 cup old fashioned rolled oats
2 scoops protein powder or collagen
1/2 tsp pumpkin spice
1/2 tsp cinnamon
1/2+ cup chocolate chips or cacao nibs/pieces
Optional
2 Tbsps flaxseed, hemp or chia seeds for extra protein and nutrients
2 tbsp pumpkin seeds
1/4 cup nuts or seeds of choice ~ chopped walnuts/cashews or sliced almonds, pumpkin or sunflower seeds
Dash of salt
Directions
Add all the above ingredients to a bowl and mix. If too wet you can add more oatmeal.
Roll a generous teaspoonful size of dough into a ball and place on cookie sheet lined with parchment paper and chill in your refrigerator for about 1 hour or until firm. You can also freeze in your freezer to speed it up.
Store in an airtight container up to 1 week in your refrigerator or you can freeze them to last longer. We like to freeze extra dough for quick and easy batches!
