Chocolate Chip Pumpkin Protein Cookies!

  

These no bake protein cookies are simply delicious and nutritious, Thriving With Health's ultimate goal in providing health bites that you can love and they can love you back. These are great for a snack, desert and even a quick breakfast! Best of all you know what's in them and they don't contain any harmful processed chemicals. You can enjoy eating these tasty and healthy treats guilt free because they contain whole, clean and real ingredients. Clean meaning real food ingredients and not fake processed ingredients that were made in a plant that may cause illness and may encourage overeating and weight gain. These are a healthy and nutritious treat that are delicious with a cup of tea, coffee or a glass of nut or oatmeal milk❣️ 

Prep Time: 10 minutes

Chill Time: 1 hour 

Servings: 25+ cookies

Category: Snack & Desert

Ingredients

Wet

1/2 cup organic pumpkin puree

1/2 cup organic unsweetned almond or peanut butter

1/4 cup maple syrup or honey 

1 tsp vanilla extract

Dry

1 3/4 cup old fashioned rolled oats

2 scoops protein powder or collagen 

1/2 tsp pumpkin spice

1/2 tsp cinnamon 

1/2+ cup chocolate chips or cacao nibs/pieces

Optional

2 Tbsps flaxseed, hemp or chia seeds for extra protein and nutrients

2 tbsp pumpkin seeds

1/4 cup nuts or seeds of choice ~ chopped walnuts/cashews or sliced almonds, pumpkin or sunflower seeds

Dash of salt  

Directions

Add all the above ingredients to a bowl and mix. If too wet you can add more oatmeal. 

 

Roll a generous teaspoonful size of dough into a ball and place on cookie sheet lined with parchment paper and chill in your refrigerator for about 1 hour or until firm. You can also freeze in your freezer to speed it up.

Store in an airtight container up to 1 week in your refrigerator or you can freeze them to last longer. We like to freeze extra dough for quick and easy batches!

I too struggled with losing weight & developed an eating disorder that I was able to heal by educating myself on healthier habits. It’s amazing what our bodies can do when we learn to take care of them like God intended. These experiences & challenges fueled my passion to be a life long student in pursuit of learning how to create healthier lifestyles where one can thrive at their optimal best. As a mother of 3 children & a wife of a traveling husband, I quickly learned how to implement healthy habits on the go so that I could be my healthy best for my family. This has evolved into my health coaching business Thriving With Health where I coach people to integrate simple & fun healthy 'bites’ throughout their day even on their most busiest & challenging ones.
