Start With The Basics
This is Thriving With Health's kind of recipe that I like to call a 'KISSED' recipe meaning 'Keeping It Super Simple Every Day'. This tasty treat is just that. This can be a snack or an appetizer that is quick to create and a tasty option that is filling without feeling too full.
All you need is some cut up watermelon or you can use cookie cutters for fun like the holiday option below, add some creamy goat cheese rolled into tiny balls or cheese slices you can cut cute shapes out with cookie cutters as well and top it off with shelled pistachios or nuts of choice. Be creative and experiment with diced red onion, chives and you can add a sprinkle of favorite seasonings.
A beautiful and delicious appetizer to serve at luncheons and dinner party celebrations.

Cut 1/2 inch Slices to Cut Triangles or Use a Cookie Cutter🔪
Kiddo Friendly Tree Option❣️
These are really cute for the holidays🎄
Option 1
Cut 1/2 inch thick slices cutting out a small wedge in the center of the rind for the tree base.
Option 2
You can use a small Christmas tree cookie cutter and your kiddos will love this part decorating with goat cheese slices cut into stars or whatever you fancy to top your tree. Garnish with pistachios and any other favorite seasonings you may want to sprinkle on top.
Watermelon Appetizers
Option 1:
Time: 15 minutes
Servings This will depend on the size of your watermelon and the size of your cubes or cookie cutter shapes that you cut out.
Ingredients
1 watermelon cut into approximately 1-2 inch cubes or use some fun cookie cutters❣️
4-8 oz of spreadable goat cheese*
*Note: if lactose intolerant make sure your goat or sheep cheese is 100% and not combined with cow's milk so be sure to check the label.
1/2+ cup shelled whole pistachios raw or roasted, salted or unsalted whichever you prefer.
Directions
Roll up small dollops of goat cheese and place on the watermelon cube or you can spread the cheese on top if time permits. If the cheese is too crumbly or challenging to spread, you can heat it up either in a double broiler or in the microwave until it becomes spreadable but be careful it doesn't burn.
Top each cube with 1 or more pistachios depending on the size of the cube. Note: You could chop the nuts for a crunchier version.
Holiday Option 2
*Slice your watermelon in half and proceed to slice into 1/2 inch slices
*Cut the slice into several triangle pieces cutting at an angle with the rind as the bottom and cut out a small wedge in the center for the base of the tree.
*Add cheese, pistachios and seasonings
Option 3
*After slicing your 1/2 inch slices use cookie cutters to cut out desired shapes and decorate with cheese, pistachios and choice of seasonings.
