Tangy Avocado Lime Salad Dressing
This is such an easy, delicious and fun dressing to make! Invite your kids, family members and friends to join in the fun making it. Food prep is an art and an enjoyable one too. Guaranteed to bring on the gigglesš¤
Servings: 8
Yield: 1 cup
Prep: 10 minutes
Ingredients
1 large or 2 medium ripe avocados pitted and mashed. Save the avocado pit(s)!
1/4 cup EVOO
1/4+ cup water to thin as desired
1 lime juiced (2 small or 1 medium size)
2 pressed garlic cloves or 1/8th tsp garlic powder if short on time
Pinch of sea salt to taste
Options*
1/4 tsp lime zest to add more bite
1 jalapeño seeded and finely chopped
1/4 cup chopped cilantro
1/4 cup chopped basil
1/4 cup chopped parsley or Italian parsley
*Please use organic ingredients when availableš
Directions
Place all the ingredients into container of choice. Mason jars are great because they are so easy to mix and store.
Place saved avocado pit into the container, close the top securely with the lid and shake vigorously until well emulsified. The longer you shake the thicker it will become.
Note: You can use a blender to combine but shaking the jar is so much more fun if time permitsš
This dressing will last about 3-4 days in an airtight sealed container in your refrigerator.
*Note if adding cilantro, basil or parsley it’s better to add just before serving to retain flavor and freshness.
Avocado lime dressing is also very tasty on whole grains, tacos and steamed or grilled veggies. Be creative this is your masterpiece so have fun with it!
